If it is real Scottish food that you are looking for, then you won't find a better option than this stovies recipe. The word stovies refers to a Scottish dish made from potatoes and often leftover meat, and this stew-like recipe uses whatever you happen to have to hand on a Monday, the day after your big Sunday roast.

Preparation

 

Ingredients 
- olive oil 
- 1 x onion 
- 1 x pack of vegetable pack mix (either soup mix but remove the lentils or barley) 
- herbs (I used a little rosemary as I’m using lamb) 
- 500-600g meat (I’m using a combination of 180g leftover lamb - but beef roast works just as well) and 400g Falleninch Pork Links

- 500g potatoes (peeled and chopped in half) 
- 1 x lamb stock cube (or beef if using) in 800ml of water 
- 300g leftover gravy (or make some using gravy granules) 

Method 
1. Add chopped onion and veg mix pack to pot with olive oil and a sprinkle of rosemary and cook for 10 mins until slightly softened 
2. Add uncooked sausages and fry for a further 5 mins 
3. Add cooked meat, peeled and halved potatoes and lamb stock 
4. The stock should be able to cover the potatoes as we’ll need them to cook in the pot - so add a little more if they aren’t submerged 
5. Cook on medium heat for 1hr 30 mins - checking every 30 mins - until veg and potatoes are softened and everything looks like it’s starting to come together 
6. Stir through leftover gravy (or make some up using gravy granules) and serve!
